I know that I am always looking for easy and fun recipes especially for children. Hope this helps more than just me! So, send me recipes and I will post them....the more the better this blog can be....or if you have ideas, let me know (ex:tuna or beef) I will find something and post it.

Pumpkin Chocolate Chip Cookies

½ cup shortening
1 ½ cup sugar
1 egg
1 cup can pumpkin
1 tsp vanilla
2 ½ cups flour
1 tsp baking powder
1 tsp baking soda
1 tsp salt
1 tsp nutmeg
1 tsp cinnamon
1 bag chocolate chips
Blend shortening and sugar. Add egg blend. Add pumpkin and vanilla. Add dry mix. Add chocolate chips. Bake at 350 for 12-15minutes.

EASIEST CHICKEN SPAGHETTI

1 Broasted Chicken
1 can Ro-Tel
1 can Cream of Mushroom soup
1 small can of Pet Milk or 1/2 jar of Alfredo Sauce, (depends on your personal taste)
small box of Velvetta Cheese cut into small chunks
1/2 package of spaghetti
1 cup of Italian Bread Crumbs

Cook spaghetti and set aside
Debone and skin chicken. Use as much or as little as you want
Combine Rotel, soup and milk and then add chicken to mixture
Pour spaghetti into a cooking dish and pour chicken mixture over this. Mix well
Take cheese chunks and push down into mixture
Cover and bake at 350 for 30 minutes
Remove cover and sprinkle bread crumbs on top
Return cassarole to oven for about 5-10 minutes to brown

Beef Taco Skillet

1 lb beef
1 can (10 3/4oz) Tomato soup
1 cup chunky salsa
1/2 cup water
8 corn or flour tortillas, cut into 1-inch pieces
1 cup shredded cheese

Cook beef in skillet until browned.  Pour off any fat.  Stir the soup, salsa, water, tortilla and 1/2 cup of the cheese into the skillet.  Heat to a boil.  Reduce heat to low.  Cover and cook for 5 mins.  Top with remaining cheese. 

Beef-Rice Casserole

1 lb ground beef
2 cans cream of onion soup
1 pkg dry onion soup mix
1 cup rich, uncooked

Mix all ingredients.  Put in baking dish and bake covered. 

Grilled Pork Chops

1/4 teaspoon salt
3/4 teaspoon lemon pepper
1/2 teaspoon dried whole oregano leaves
4 (1-inch thick) pork chops

Mix salt, lemon pepper and oregano.  Coat pork chops.  Grill over low to medium heat for 25 mins or until choips are no longer pink.  Turn once. 

Chicken Enchilades

1 Roasted Chicken
1 can of Old ElPaso Enchilada Sauce
1 can of cream of chicken soup (reg size)
1 bunch of small green onions (i do not use these)
Shredded Cheese
1 pkg of taco seasoning
Tortillas (6-8)
Sour Cream

Debone chicken.  Mix desired amount of taco seasoning into chicken mix.  Mix soup and sauce together.  Wrap chicken in tortillas and place in dish.  Take mixture and pour on top of tortillas.  Sprinkle onion and cheese on top.  (I add extra cheese to tortillas for a little extra)

Bake 20 min @350F

Put sour cream on top before serving.

Buffalo Chicken Mac

1 pkg KRAFT HOMESTYLE Mac and Cheese  Dinner
1 1/2 cups cooked and chopped chicken (I used 3 cups)
1 tbsp hot pepper sauce for Buffalo wings
1/2 cup shredded cheddar cheese
1 Tbsp chopped green onion (i left these out)

Heat oven to 425F
Prepare Mac and Cheese as directed on package but do not top with crumb toppings.  Toss chicken in wing sauce.  Stir into casserole dish and sprinkle with shredded cheese and crumb toppings.  Bake for 5-10 mins until cheese is melted.  Top with onions. 

Pesto Crostini

1/2 baguette
2 T olive oil
12 cherry or grape tomatoes
12 bocconcini
1/2 t kosher salt
4 grinds black pepper
1/2 c pesto

Heat oven to 375F.  Slice baguette.  1/2" thick slices.  place on baking sheet and brush with oil.  Bae 10-12 mins.

Once toasted, smear pesto onto each crostini.  Top with one half each of the tomato and bocconcini.  Drizzle each with remaining oil.  Season with the salt and pepper.  Put in oven for 1 min until heated. 

Crockpot Lasagna

3 cans of crushed tomatoes
3 cloves garlic
2T oregano
1/2 t kosher salt
1/4 t red pepper flakes
1/4 t black pepper
2 containers of ricotta cheese
2 c grated mozzarella
1/4 c grated parmesan
12 lasagna noodles
5 oz baby spinach

Combine tomatoes, garlic, oregano, salt, red pepper and black pepper.  In separate bowl, mix ricotta, mozzarella and parmesan. 

In slow cooker spread layer of sauce.  Top with four noodles.  Spread almost a cup of sauce over noodles.  Layer with spinach and cheese mixture.  Repeat this step twice.  Top with remaining noodles, sauce and mozzarella.  Cook on low for 3-31/2 hrs.

Tater Tot Casserole

1lb of hamburger/turkey
1 can of cream of mushroom soup
2 cups of chedder cheese
1 bag of tater tots

Brown meat.  Pour meat in pan and pour soup over meat.  Layer in cheese and add tater tots to the top of the dish and more cheese.  Bake at 375 until tater tots are brown and cheese is melted.
